Cauliflower Buffalo Bites
With the super bowl soon approaching , looking for healthy game day ideas is a must! I tested this gluten and dairy free rendition of healthy wings and loved it! This is also a perfect recipe when hosting vegetarian/vegan pals!
- 2 medium heads of organic cauliflower, cut in to bite sized pieces. (I kept most of the stem because I like the crunch!)
- 1 cup rice flour
- 1 cup water
- ¼ teaspoon salt
- ¼ teaspoon garlic power
- ¼ teaspoon paprika
1 cup of your favorite buffalo wing sauce (I used Frank’s Red Hot Buffalo Wing Sauce, which is vegan. Homemade is always an option!)
Preheat oven to 450 degrees
Thoroughly mix flour, water, salt, garlic powder, paprika in a large bowl with a fork. Add cauliflower pieces; be sure to stir until all of the cauliflower is covered in batter. Spread the mixture onto a baking sheet covered in foil or parchment paper.
Spread battered cauliflower evenly across baking sheet. Bake for 20 min.
Remove from oven and dump cauliflower into a large bowl with 1 cup buffalo wing sauce. Re-distribute cauliflower on the baking sheet and bake for another 5-10 minutes until crisp- watch to not burn them!
Remove from oven and put on serving dish, serve hot
